Another great event at Retama Village

Our weekly pot luck barbecue was a blast this week...as usual! At this weekly
event we each bring something to grill on the barbecue poolside & then we bring something to share. Some weeks we have lots of dessert & others we have lots of side dishes. You never know what people will bring but it's always bound to be good. 

As usual we had lots of good food to share & as usual we had lots of good conversation & a lot of fun. 

I didn't count but from the photos it looks like we had about 30+ people show up. Some of our events we get over 100 people attending. One thing about this place is that we can always get a crowd, no matter what it is!

That's one of the many things we like about this place...we have a good time no matter what event we go to. We do have to be a bit selective because there is just TOO many things on our monthly calendar of events. That's not a bad thing, it just means we have to pick & choose what we go to because we can't do it all, much as we'd like to!

My new best friend...the Instant Pot

Friends in our community have been raving about the Instant Pot so I started
doing a lot of research & decided it was something I needed to get. Think about making a pot roast in just over an hour of cooking time instead of hours. Think about it being so tender & juicy you don't need a knife to cut it. That is what you get when you cook it in the IP. 

I have heard there is a learning curve to using it & yes there is BUT once you get past that it's relatively easy to use & you might actually want to turn your stove into a planter. You use less electric or gas & meals cook a lot faster.

My first meal was stuffed acorn squash which was pretty simple & cooked in 8 minutes. It was recommended to start off with something simple so that's what I did. It was absolutely perfect & I couldn't believe that it was cooked to perfection in such a short period of time. 

Today I made pot roast from a recipe from the book I ordered when I ordered my IP. The recipe was called "Perfect Pot Roast" & that name says it all. The meat was so tender & juicy & packed with flavor.

I have several other meals planned for this week...all will
be made in the Instant Pot. I'm excited to try them & it really is nice to have wonderful meal that cooks in such a short period of time rather than having to wait hours for it to cook.

The photo on the right is of the pot roast I made tonight. Instead of cooking it for 2 hours on the stove top or 8 hours in a slow cooker it was 75 minutes cooking time in the Instant Pot.
